AI-Based Visual Monitoring for Olive Oil Production
WATCHED_OLIVES – AI-powered computer vision system for visual inspection of raw olive input in grinding machines
Use Case:
Development of a feasibility and business model for deploying an AI-based camera system that monitors raw olive input to prevent damage to grinding machines and preserve oil quality by detecting foreign objects.
Outcome:
AI vision pipeline designed for contamination detection at grinder input; TRL 5 achieved, with progression toward TRL 6; Business model shows dual growth opportunity: internal efficiency and external commercial productization; Positive validation from potential customers and end users through experimental testing.
Ecosystem Support:
Guided by the StairwAI Support Program, including technical mentorship from the University of Bologna and business strategy mentoring; access to expert resources for feasibility validation.
AI Relevance:
This story demonstrates key AI-on-Demand values: I) AI adoption in traditional agri-food sectors to enhance safety and quality; II) low-barrier entry to AI via targeted pilot applications; III) scalability of vision-based AI in SME production contexts; IV) innovation-driven business diversification through AI.
Summary:
Llucka Organic, a premium olive oil producer based in Albania, launched the WATCHED_OLIVES initiative to solve a common but critical problem in small-scale olive processing: contamination of grinding machines due to foreign objects mixed with harvested olives. Tey explored the feasibility of applying computer vision to monitor and automatically inspect incoming olive batches at the point of grinding. The technical plan focused on collecting image data and training a vision-based AI model to recognize threats—such as stones or metal pieces—that could damage machines or degrade oil quality. This would reduce maintenance costs, prevent breakdowns, and preserve the purity of the olive oil produced. On the business side, the team developed a model not only for internal deployment but also for scaling the solution as a marketable AI product. The analysis showed strong revenue potential on two fronts: improving Llucka’s own production and enabling sales to other companies in similar processing sectors. Experimental validation with end users confirmed usability and interest, while customer feedback highlighted trust in the system’s added value. The project reached Technology Readiness Level 5, with a clear roadmap toward TRL 6 and beyond. As a final remark, the business mentoring team praised the clarity and growth orientation of the company’s AI adoption plan.
